Vice President of Culinary Thomas Connell states the hotel's live catch, ocean-to-table seafood program, "takes freshness to a whole new level," with exclusive fishing operations delivering over 500 lbs. of fresh catches daily.
Even Dinner Gets the Special Treatment
As if this feat couldn't be more remarkable, the culinary devout at the Fontainebleau have constructed, "Water World," a 2,000-gallon assortment of tanks in the hotel's basement, each hosting a different environment based on the comforts of the fish it stores. Florida spiny lobsters soak comfortably at 70 degrees while Maine lobsters chill out in 50 degree waters. The walls of "Water World" are painted blue, and a specialized lighting system mimics the light of the ocean to help the fish feel more at home. Connell swears this comforting environment is necessary because, "The less stress a fish feels, the more delicious it's going to taste."

Executive chefs from around the resort's 12 restaurants make their way to "Water World" every morning to select the fish for that day's dishes, so you can enjoy Asian-fusion delicacies like steamed crystal lobster dumplings or seared snapper with supreme homemade soya sauce at Hakkasan.
